Apple and Almond Squares
It is so hard to find sweet treats that have an element of goodness to them.
These cakes are an adaption from a recipe on Zoe. For those of you who follow Zoe, for me these score 79/100, which is good going for sweet treat*.
The combination of healthy fat and fibre from the almonds will help to reduce your blood sugar spike that you may get from other sweet treats, whilst also helping to add 4 more plants to your target of 30 a week.
Method
Set the oven to 180c fan, 200c convection
Prepare a baking tin by lining it with baking parchment on non-stick paper. For the bites I used a square tin to be able to cut them into even squares.
In a bowl mix the 2 eggs, caster sugar and olive oil with a fork until evenly mixed
Prepare the apples by peeling, removing the core and chopping into small chunks. (See photo)
Add the chopped apples to the bowl along with the ground almonds, cinnamon, vanilla extract and baking powder. Stir until all the ingredients are evenly mixed.
Pour into the cake tin, spread out evenly with the back of a spoon and then sprinkle the flaked almonds on top.
Place in the middle of the oven and bake for 30 minutes or until cooked.
To test, place a skewer or something sharp into the cake to ensure that no cake mixture comes out on the skewer.
Allow to cool before removing it from the tin and cutting into 9 even squares.
*Zoe scores are unique and individual to everyone and this may not score the same for you.
